British celebrity chef Hugh Fearnley-Whittingstall is known in the UK for his cookery show which shows the loveable cook searching for all ways to integrate sustainable practises into modern day kitchens. The slightly eccentric chef has made his living appearing on TV shows, and is most famous for cooking everything from scratch at River Cottage, which has now become a business in his own right.
The River Cottage brand has become known in organic circles as a pioneer of the ‘grow your own’ movement. The practises adopted at River Cottage have been so successful that the Sustainable Restaurant Association (SRA) has awarded the business the highest award possible, making it the most sustainable restaurant in the UK.
Scoring highly in the award was the Cottage’s waste recycling process, which involves recycling all food and oil leftovers and using them to make bio fuels to supply power to a local college. Customers are encouraged to take their leftovers with them after dining at the restaurant, and of course there’s a good old compost heap out the back.
The ratings awarded to River Cottage come as the SRA is attempting to classify hundreds of restaurants across the United Kingdom, in a bid to rate their sustainable and environmental practises. River Cottage seems miles ahead, invoking sustainability throughout its business, so here’s hoping others will follow suit across the British Isles.
